Method
Preparing the Patties

Mix the Beef
In a large bowl, combine the Angus ground beef, taco seasoning, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

Form the Patties
Divide the mixture into two equal portions and shape them into patties, about 1 inch thick.
Cooking the Patties

Add Cheese
In the last minute of cooking, place the cheese blend on top of each patty and cover to melt the cheese.
Assembling the Burger

Prepare the Buns
Toast the brioche buns until golden brown on the inside.

Build the Burger
On the bottom half of each bun, place the cheese-covered patty, followed by sliced red onion, diced spicy green chili, and jalapeño crisps. Top with the other half of the bun.
Serving

Serve the New Mexico Burger with a side of tortilla chips.
