    In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.

    Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

    Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.

    Cover the dough and refrigerate for at least 30 minutes.

    Preheat the oven to 350°F (175°C). Drop spoonfuls of dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes until golden brown.

    Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Mousse Directions

    Prepare the Gelatin

    In a small bowl, combine the gelatin powder with water and let it sit for about 5 minutes to bloom.

    Heat the Gelatin

    Gently heat the bloomed gelatin in the microwave for about 10 seconds until dissolved. Let it cool slightly.

    Whip the Cream

    In a large mixing bowl, whip the heavy cream and granulated sugar until soft peaks form.

    Add Vanilla and Gelatin

    Stir in the vanilla extract and the cooled gelatin mixture into the whipped cream until well combined.

    Add Cocoa Powder

    Sift in the cocoa powder and gently fold it into the mixture until fully incorporated.

    Chill the Mousse

    Transfer the mousse to serving bowls or a large dish and refrigerate for at least 1 hour to set.
