Preparing the Fish

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick.

Heat the Oil
In a large, deep pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is ready.

Batter the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish into the hot oil, a few pieces at a time. Fry for about 4-5 minutes on each side until golden brown and crispy. Remove them with a slotted spoon and place them on paper towels to drain excess oil.

Cut the Potatoes
Peel the potatoes and cut them into thick strips, about 1/4 inch wide.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. This will help achieve crispy fries.

In a separate large pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Drain and pat the soaked potatoes dry. Fry them in batches for about 5-7 minutes until golden and crispy. Remove and drain on paper towels, then season with salt.
Making the Tartar Sauce

Combine Ingredients
In a small bowl, mix together the mayonnaise, chopped pickles, capers, lemon juice, chopped dill, and salt. Stir until well combined.

Cover the tartar sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
