Mashing

Prepare the Mash
In a large brew kettle, add 5 gallons of filtered water and heat to approximately 165°F (74°C).

Add Grains
Once the water is at the desired temperature, stir in the Munich Malt, Pilsner Malt, Chocolate Malt, and Caramunich Malt. Maintain the temperature around 150°F (65°C) for 60 minutes.

Sparge
After mashing, sparge the grains with an additional 3 gallons of water at 170°F (77°C) to collect the wort.
Boiling

Boil the Wort
Bring the collected wort to a boil, and add the Hallertau hops. Boil for 60 minutes.

Add Flavor Hops
With 15 minutes left in the boil, add the Tettnang hops.
Cooling and Fermentation

Cool the Wort
After boiling, rapidly cool the wort to approximately 70°F (21°C) using a wort chiller.

Pitch Yeast
Transfer the cooled wort to a sanitized fermenter, and pitch the German wheat yeast.

Ferment
Seal the fermenter and allow it to ferment for 1-2 weeks at 65-70°F (18-21°C).
Bottling

Prepare Bottling
Once fermentation is complete, dissolve 3 oz of corn sugar in 2 cups of boiling water to create priming sugar solution.

Bottling Process
Add the priming sugar solution to the fermenter, mix gently, and bottle the beer into sanitized bottles. Cap the bottles securely.

Carbonation
Allow the bottles to carbonate at room temperature for 1-2 weeks before refrigerating.
