    Prepare the tortillas

    Cut each corn tortilla into six equal triangles to form chips.

    Heat the oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the chips

    Carefully add a few tortilla triangles to the hot oil and fry for 2-3 minutes or until golden brown and crispy. Stir occasionally to ensure even cooking.

    Drain and season

    Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt while still hot.

    Prepare the ingredients

    Dice the tomatoes, onion, and jalapeño pepper. Finely chop the cilantro and juice the lime.

    Mix the salsa

    In a medium bowl, combine the diced tomatoes, onion, jalapeño, cilantro, lime juice, salt, and garlic powder. Stir well to combine all ingredients.

    Chill

    Cover the salsa with plastic wrap and let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld together.
