Chop chocolate
Place the finely chopped chocolate in a medium heatproof bowl so it can melt evenly. If using two chocolates (e.g., semisweet + bittersweet), mix them together.
Heat cream
In a small saucepan, bring the heavy cream just to a simmer over medium heat. Remove from heat as soon as you see small bubbles at the edge; do not boil.
Make ganache
Pour the hot cream over the chopped chocolate in two additions, waiting 30 seconds after the first pour before stirring. Gently stir with a spatula from the center outward in slow concentric motions until the chocolate is fully melted and the mixture is smooth and glossy.
Cool to set consistency
Cover the surface with plastic wrap to prevent a skin from forming. Let the ganache cool at room temperature until it reaches a spreadable, thickened stage (about 1–2 hours depending on room temperature). For faster cooling, chill in the refrigerator, checking every 10–15 minutes and stirring gently when edges firm; do not let it become solid — you want a chilled but whip-able texture.
Whip to aerate
Transfer the cooled ganache to the bowl of a stand mixer fitted with the whisk attachment or use a hand mixer. Whip on medium-high speed in 30–45 second bursts, scraping the bowl between bursts, until the ganache lightens in color and gains a creamy, pipeable mousse-like consistency. Total whipping time will typically be 2–4 minutes. Stop when soft peaks form — overwhipping can make it grainy.
Adjust and store
If the whipped ganache is too stiff, fold in 1–2 teaspoons of warm cream to loosen. If too soft, chill briefly (5–10 minutes) and re-whip gently. Use immediately to pipe or spread. Store any leftover in an airtight container in the refrigerator for up to 5 days; bring to room temperature and gently re-whip before using.
Chocolate Crisp Pearls
Prepare chocolate for melting
Chop the dark chocolate into small even pieces and place in a heatproof bowl. If you prefer a bit more fluidity for enrobing, measure the neutral oil and have it ready.
Melt chocolate
Melt the chocolate gently: either in 20–30 second bursts in the microwave at 50% power, stirring between bursts, or using a double boiler (bain-marie) over simmering water. Heat until the chocolate is fully melted and smooth. If needed, stir in the neutral oil 5–10 ml at a time to reach a fluid but not thin consistency. Remove from heat and cool slightly so it remains fluid but not hot (around 30–32°C / 86–90°F).
Combine puffed rice
Place the puffed rice (and optional cocoa nibs/toasted nuts) in a mixing bowl. Pour the melted chocolate over the puffed rice and fold gently until all pieces are evenly coated. Work quickly so the chocolate sets with an even coating.
Form pearls
Using two teaspoons or a small melon baller, scoop small moundfuls (~6–8 mm diameter) of the coated puffed rice and place them onto a parchment- or silicone-lined sheet tray, leaving a few millimeters between each. For more uniform pearls, you can pipe small dots of the mixture with a small piping bag or use a chilled spoon to help them set.
Set and finish
Refrigerate the tray for 10–15 minutes until the chocolate is fully set and the pearls are crisp. Transfer to an airtight container and store in a cool, dry place or refrigerate if your environment is warm. Use within 5–7 days for best texture.
Optional: Tempering for shine and snap
If you want very glossy, stable pearls that don't bloom, temper the chocolate before coating: heat to 45–50°C (113–122°F), cool to 27–28°C (80–82°F), then reheat slightly to 31–32°C (88–90°F) for dark chocolate. Then proceed to coat the puffed rice as above.
