Prepare mushrooms
Gently separate oyster mushrooms into bite-size clusters or individual pieces, keeping natural shape for crisp edges. Trim any tough stems. Pat dry thoroughly with paper towels; excess moisture prevents crisping.

Season mushrooms lightly with 1/2 tsp of the kosher salt and 1/4 tsp black pepper; set aside while you make the batter.

Make the batter
In a medium bowl whisk together 1 cup all-purpose flour, 1/2 cup cornstarch, 1 tsp baking powder, 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. Crack in 1 large egg and whisk lightly. Gradually add 1 cup cold sparkling water while stirring until just combined — a few small lumps are fine. Nest an ice cube or two at the bottom of the batter bowl (or keep batter chilled) to keep it cold; cold batter helps create a lighter, crisper crust.

Place 1/2 cup flour in a shallow bowl for dusting. If using breadcrumbs/panko, place 3/4 cup in a separate shallow bowl. Dust each mushroom lightly with flour before dipping — this helps the batter adhere.
Frying

Heat oil
Pour about 1 L neutral oil into a deep pot or heavy-bottomed pan to a depth of 2–3 inches. Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter — it should sizzle and rise immediately but not brown within 10–15 seconds.

Working in small batches (to avoid crowding), dust mushrooms with flour, dip into the chilled batter to coat fully, then optionally press into breadcrumbs/panko for extra crunch. Shake off excess and carefully lower into hot oil using a slotted spoon or spider.

Fry 3–5 minutes per batch, turning if needed, until batter is golden brown and crisp. Monitor oil temperature between batches and adjust heat to keep near 350°F (175°C). Overcrowding will lower oil temperature and make mushrooms greasy.

Banana BBQ Sauce

Cook the banana
Peel the ripe banana and finely mash it with a fork (a mostly smooth puree is fine). Heat 1 tsp neutral oil in a small saucepan over medium heat. Add the mashed banana and cook 1–2 minutes, stirring, until it softens and begins to brown slightly; this brings out sweetness and reduces raw banana flavor.

Simmer sauce
Add 1/2 cup ketchup, 2 tbsp brown sugar, 2 tbsp apple cider vinegar, 1 tbsp soy sauce, 1 tsp smoked paprika, 1 tsp hot sauce, 1 tsp yellow mustard, and 2 tbsp water to the pan with the banana. Stir to combine and bring to a gentle simmer. Cook 3–5 minutes, stirring occasionally, until thickened to a saucy consistency. Taste and season with 1/2 tsp salt and 1 tsp fresh lime juice, adjusting sugar, vinegar, or hot sauce to your preference.

If you prefer a completely smooth sauce, let it cool slightly then blend briefly with an immersion blender or regular blender until smooth. Keep warm or transfer to a small serving bowl.
