Preparation Directions
Prepare the Chorizo
Slice the chorizo sausage into thin rounds. Heat 2 tablespoons of olive oil in a skillet over medium heat and add the chorizo. Cook until the chorizo is browned and crispy, about 5-7 minutes. Remove from pan and set aside.
Sauté the Pimientos
In the same skillet, add the Pimientos de Padrón and cook for about 4-5 minutes until blistered and tender. Season with sea salt and set aside.
Prepare the Olives
In a small bowl, combine the mixed olives with minced garlic, a tablespoon of olive oil, and a pinch of black pepper. Toss to combine.
Roast the Cherry Tomatoes
On a baking sheet, arrange the cherry tomatoes. Drizzle with olive oil and sprinkle with sea salt. Roast in a preheated oven at 200°C (400°F) for about 15-20 minutes until soft and slightly caramelized.
Slice the Baguette
Slice the baguette into thin pieces. Optionally, you can toast them in the oven for a few minutes for extra crunch.
Assemble the Tapas
On a large serving platter, arrange the chorizo, sautéed Pimientos, marinated olives, and roasted cherry tomatoes. Garnish with fresh basil leaves and serve alongside the sliced baguette.
