Cook the protein
Increase heat to medium-high and add the 0.25 lb ground beef or ground chicken to the skillet. Break up with a spoon and cook 4–6 minutes (beef) or 5–7 minutes (chicken) until no longer pink and starting to brown in spots.

Season and finish
Sprinkle chili powder, ground cumin, smoked paprika, kosher salt, and black pepper over the cooked meat. Stir to combine, add 2 tbsp water, and simmer 1–2 minutes so spices coat the meat and any loose juices reduce. Finish with 1/2 tsp lime juice, stir, taste and adjust salt. Keep warm off heat.
Tortilla & Frying

Heat oil
Pour 1/4 cup neutral oil into a small heavy skillet (or fryer). Heat over medium-high until oil reaches 350°F (175°C) or a small piece of tortilla sizzles immediately when added. Maintain a steady medium-high heat; do not let oil smoke.

Fry and shape the crispy shell
Working one tortilla at a time, place the tortilla into the hot oil for about 6–12 seconds until pliable but not fully browned. Using tongs, fold the tortilla in half around a wooden spoon handle or metal spatula to form a taco shell shape, holding it folded for 10–15 seconds so it crisps and sets. Continue frying, turning as needed, until the shell is golden-brown and crisp (about 20–30 seconds total per tortilla depending on thickness). Drain on paper towels. For a uniformly crisp edge, you can spoon hot oil over the exposed surface while holding folded.

Melt cheese liner (optional for extra crisp & flavor)
If you want a cheesy edge, immediately after frying and while shell is still hot, sprinkle 1/4 cup shredded cheddar inside the shell near the edges and return briefly to the skillet off direct oil (low heat) or gently toss under a broiler for 20–30 seconds until cheese melts and adheres. Let cool 30 seconds so cheese sets.

Fill the shell
Place 2–3 tbsp of the cooked seasoned meat into the bottom of the warm crispy shell (adjust to preference).

Add fresh toppings
Top the meat with 1/4 cup shredded lettuce, 2 tbsp diced tomatoes, 1 tbsp diced onion, and 1 tsp chopped cilantro.

Sauce and finish
Add 1 tbsp sour cream or crema and 1 tbsp salsa or taco sauce over the top. Squeeze the 1/4 lime wedge over the taco. Add pickled jalapeño slice and/or 1 tsp hot sauce if desired.

Serve immediately while shell is hot and crisp. Each assembled taco is intended as a single serving. For minimum-order preparation (15 tacos), multiply ingredient quantities by 15 and fry shells in batches, keeping finished shells warm in a low oven (200°F/95°C) on a wire rack so they remain crisp.
