    Prepare fillings

    If using chicken or beef, heat already-cooked meat with a splash of water or taco seasoning until warmed through and shred or crumble as needed. Sauté sliced bell peppers and red onion in 1 tablespoon oil over medium heat until softened, about 4–5 minutes; set aside.

    Heat a large nonstick skillet or griddle over medium heat. Lightly brush one side of a tortilla with a little oil or butter (about 1/2 teaspoon). Place tortilla oil-side down on the skillet.

    On the warm side of the tortilla, sprinkle a thin, even layer (about 1/4–1/3 cup) of the shredded cheddar and Monterey Jack mixture, then add desired fillings: 1/4 cup shredded chicken or ground beef (if using), a tablespoon of sautéed peppers and onions. Top with another 1/4 cup of cheese to help the quesadilla seal.

    Top with another tortilla (or fold the tortilla over if making half-moon quesadillas). Cook 2–3 minutes until the bottom is golden and the cheese starts to melt. Carefully flip and cook another 2 minutes until the second side is golden and cheese is fully melted. Repeat to make 8 quesadillas or 16 half-moons depending on how you assemble, adding oil/butter to the pan as needed.

    Transfer cooked quesadillas to a cutting board and let rest 1 minute. Cut into wedges (4 wedges per tortilla if whole) and keep warm in a low oven (about 200°F / 95°C) while finishing the rest.

Queso (warm cheese dip)

    In a medium saucepan, melt butter over medium heat. Add the chopped onion and cook until translucent, about 3–4 minutes. Add the minced garlic and cook 30 seconds more until fragrant.

    Whisk in the flour and cook, stirring constantly, 1 minute to remove the raw flour taste.

    Slowly whisk in the milk and half-and-half, stirring until smooth. Continue to cook until mixture just begins to simmer and thickens slightly, about 3–4 minutes.

    Reduce heat to low. Gradually add the shredded American and cheddar cheeses in small handfuls, stirring constantly until each addition melts and creates a smooth sauce. Stir in the diced green chiles, cumin, salt, pepper and hot sauce if using. Keep warm on the lowest heat, stirring occasionally, or transfer to a small slow cooker or fondue pot to keep warm for service.

Accompaniments & Service

    Arrange tortilla chips in a shallow bowl or on a platter near the warm queso. Place salsa, sour cream, and guacamole in serving bowls. Sprinkle chopped cilantro over sour cream or guacamole and add lime wedges on the platter.

    Set out the cut quesadilla wedges on a large platter. Label or arrange optional fillings (chicken, beef, peppers/onions) separately so guests can assemble or choose. Provide small plates, napkins and utensils as needed.

    Serve immediately while quesadillas are hot and queso is warm. Reheat queso gently if it begins to thicken; add a splash of milk and stir to loosen.
