Pulled Chicken

    Prepare aromatics

    Slice half an onion into thin strips (about 1/2 cup). Mince 2 garlic cloves. Set aside.

    Sear chicken

    Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Season both sides of 1 lb chicken breasts with 1/2 tsp salt and 1/8 tsp black pepper. Sear chicken 2–3 minutes per side until golden (not cooked through).

    Simmer to shred

    Add seared chicken back to the pan (or transfer to a small pot or slow cooker). Add 1 cup chicken broth, sliced onion, minced garlic, 1 tsp smoked paprika, 1/2 tsp ground cumin, 1/2 tsp chili powder, remaining 1/4 tsp black pepper, and remaining 1/4 tsp salt. Bring to a gentle simmer, cover, and cook 12–15 minutes until chicken reaches 165°F (74°C) or is fully cooked through.

    Shred and season

    Remove chicken to a cutting board and use two forks to shred. Return shredded chicken to the pan with any remaining cooking liquid. Add 1 tablespoon lime juice, toss to combine and let the chicken absorb liquid for 1–2 minutes. Taste and adjust seasoning with additional salt or lime if desired. Keep warm.

Quesadilla Assembly

    Prepare cheese mix

    Combine 1 cup shredded cheddar and 1 cup shredded Monterey Jack in a bowl. Mix in 2 tablespoons sliced scallions and 2 tablespoons chopped cilantro so flavors distribute evenly.

    Assemble quesadillas

    Lay one tortilla flat. Sprinkle about 1/2 cup of the cheese mixture over half the tortilla, leaving a 1/4-inch border. Top with about 1/4 of the pulled chicken (roughly 1/2 cup), spreading evenly. Add another 2 tablespoons of cheese over the chicken to help it bind. Fold the tortilla in half to enclose filling. Repeat to make 4 quesadillas.

    Cook quesadillas

    Heat a large nonstick skillet or griddle over medium heat. Add 1/2 tablespoon butter and let it melt and coat the pan. Place one folded quesadilla in the skillet and cook 2–3 minutes until the underside is golden brown and crispy. Carefully flip (use a spatula) and add remaining 1/2 tablespoon butter around the edge, cooking another 2–3 minutes until cheese is melted and second side is golden. Repeat with remaining quesadillas, adjusting heat so they brown but cheese melts. Total cooking per quesadilla: 4–6 minutes.

    Rest and slice

    Transfer cooked quesadillas to a cutting board and let rest 1 minute. Cut each into 3 wedges. This short rest helps the cheese settle so slices hold together.

    Serve quesadilla wedges topped or plated with sour cream, salsa, and sliced avocado or a spoonful of guacamole. Offer lime wedges to squeeze over the quesadillas and extra cilantro or scallions if desired.
