Method
Picadillo (seasoned ground beef)

sauté aromatics
Heat a large skillet over medium heat. Add olive oil. Once shimmering, add the chopped onion and sauté 4–5 minutes until softened and translucent. Add minced garlic and cook 30 seconds until fragrant.

Increase heat to medium-high and add the ground beef, breaking it up with a spoon. Cook 6–8 minutes until no longer pink and beginning to brown.

season and simmer
Stir in tomato sauce, sliced olives and raisins if using, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Add the stock (or water) to loosen. Reduce heat to low and simmer 6–8 minutes, stirring occasionally, until slightly thickened and flavors meld. Taste and adjust salt/pepper. Stir in chopped cilantro if using and remove from heat.
Pico de Gallo

In a small bowl combine diced tomatoes, chopped red onion, minced jalapeño, chopped cilantro, lime juice and salt. Mix gently and let sit 10–15 minutes at room temperature to marry flavors. Taste and adjust lime or salt as needed.
Lime crema

Whisk together sour cream, mayonnaise, lime juice and lime zest. Add hot water a teaspoon at a time to reach a pourable drizzling consistency. Season with a pinch of salt. Chill briefly if desired.

Assemble tacos: place about 2–3 tablespoons of the picadillo in the center of each tortilla. Sprinkle with shredded cheddar (about 2 tablespoons per taco). Add a small handful of shredded romaine (roughly 2 tablespoons). Top with a spoonful of pico de gallo (about 1 tablespoon). Drizzle 1–2 teaspoons of lime crema over the top and garnish with cilantro leaves and a lime wedge on the side.

Serve immediately while warm. Leftover picadillo keeps in an airtight container in the refrigerator for up to 3 days; reheat gently on the stove or in the microwave before assembling additional tacos.
