    Prepare produce

    Halve the avocados, remove pits, and scoop flesh into a very large mixing bowl. Immediately squeeze 4 tablespoons of the lime juice over the avocado to slow browning and add flavor. Finely dice the white onion, seed and dice the Roma tomatoes, remove stems and roughly chop the cilantro, mince the jalapeños (remove seeds for milder heat) and garlic.

    Mash avocados

    Using a potato masher or a fork, coarsely mash the avocado to your desired texture — aim for a mix of creamy base with some small chunks for texture. Stop when the mixture is mostly smooth but still slightly chunky.

    Combine ingredients

    Add the diced onion (1.5 cups), chopped cilantro (1 cup), diced tomatoes (1.5 cups), minced jalapeño (2 tbsp), minced garlic (2 tsp) to the bowl with the mashed avocado. Sprinkle in kosher salt (2 tsp), black pepper (1 tsp), ground cumin (1 tsp) and cayenne or hot sauce (0.5 tsp) if using. Pour in the remaining 2 tablespoons of lime juice (so total 6 tbsp).

    Mix and adjust seasoning

    Gently fold all ingredients together with a large spoon until evenly combined, taking care not to overwork — you want distinct bits of tomato and cilantro. Taste and adjust seasoning: add more salt, lime juice, or jalapeño as needed. If mixture tastes a bit dry, stir in up to 2 teaspoons of extra-virgin olive oil for a glossy finish.

    Chill and meld (optional)

    For best flavor, cover the bowl with plastic wrap pressed directly onto the surface of the guacamole to minimize air contact and refrigerate for 20–30 minutes to allow flavors to meld. If serving immediately, skip chilling.

    Final garnish and serve

    Transfer to a serving bowl and sprinkle with extra cilantro leaves (about 1/4 cup). Arrange lime wedges around the bowl and serve with tortilla chips or vegetable crudités. If not serving right away, keep plastic wrap pressed to the surface until ready to serve to limit browning.
