Prep and marinate
Slice the chicken breasts thinly across the grain into 1/4-inch strips. In a bowl, whisk together 2 tbs olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, 3/4 tsp kosher salt and 1/2 tsp black pepper. Add the chicken strips, toss to fully coat, and let marinate at room temperature for 15 minutes (or refrigerate up to 2 hours).

Cook the chicken
Heat a large skillet (preferably cast iron) over medium-high heat until hot. Add the marinated chicken in a single layer (work in batches if needed) and cook undisturbed for 2-3 minutes to brown, then stir and continue cooking 2-3 more minutes until cooked through and no longer pink (internal temp 165°F / 74°C). Remove chicken to a plate and tent with foil.

Slice vegetables
While chicken marinates, thinly slice the onion and bell peppers into 1/4-inch strips so they match the chicken size for even filling.

Sauté vegetables
In the same skillet over medium-high heat, add 1 tbs olive oil. Add the sliced onion and bell peppers, season with 1/2 tsp salt and 1/4 tsp black pepper. Sauté, stirring occasionally, 6-8 minutes until softened and edges are lightly browned but still slightly crisp. If you like softer vegetables, cook 1–2 minutes longer. Return the cooked chicken to the skillet, toss with the vegetables for 1 minute to combine and reheat, then remove from heat.

Assemble quesadillas
Place a tortilla on a clean work surface. Sprinkle about 1/4 cup shredded Monterey Jack and 2 tbs shredded cheddar across half of the tortilla. Top cheese with a generous 1/3 to 1/2 cup of the chicken and vegetable mixture (evenly distributed). Sprinkle another 1/4 cup Monterey Jack on top of the filling (this helps the top tortilla stick). Fold the tortilla over to create a half-moon.

Cook until golden
Melt 1/2 tbs butter in the skillet over medium heat. Place the folded quesadilla seam-side down and cook 2–3 minutes until the underside is golden brown and crisp. Carefully flip using a spatula and cook the other side 2–3 minutes until golden and cheese is fully melted. Transfer to a cutting board and let rest 1 minute before slicing into 3 wedges. Repeat the assembly and cooking steps for remaining tortillas, adding more butter to the skillet as needed.

Serve quesadilla wedges hot with sour cream, salsa, a sprinkle of chopped fresh cilantro, and lime wedges for squeezing. Leftovers keep covered in the refrigerator up to 3 days; reheat in a skillet or oven to keep them crisp.
