Chocolate Piñata Recipe

Chocolate Shell

Prepare mold
If using a balloon: inflate to about 8–9 inches diameter and tie. Lightly oil the balloon surface with nonstick spray or rubbed neutral oil so chocolate releases. If using a round plastic mold, line with oiled parchment to aid release.

Temper/melt chocolate
Place chopped semisweet chocolate and cocoa butter (or coconut oil) in a heatproof bowl. Melt using a double boiler or microwave in 20–30 second bursts, stirring between, until smooth and mostly melted. If tempering, cool chocolate to about 88–90°F (31–32°C) for semisweet; otherwise ensure it's fluid and smooth.

Build shells
Working quickly, spoon or brush a thick, even coat of melted chocolate over the bottom half of the balloon or inside the mold to form the first shell layer (aim for about 2–3 mm thick). Place on a parchment-lined tray and chill 5–10 minutes until set. Apply a second coat focusing on edges and any thin spots to strengthen the shell. Chill until fully set, 15–20 minutes. Repeat the process for a second hemisphere (use a second balloon or the same balloon slightly repositioned) so you have two matching shell halves.

Demold
Once set, very gently deflate and remove the balloon (if used) or peel parchment from molds. Handle shells carefully—if edges are uneven, trim lightly with a warm knife to create a clean rim for joining.
Filling

Prepare fruit and churros: hull and quarter strawberries, dice pineapple into small pieces, and rinse/dry blueberries. If mini churros are store-bought and cold, warm them briefly (oven 325°F/160°C for 4–6 minutes) to refresh; allow to cool slightly before assembly. Toast slivered almonds in a dry skillet over medium heat for 3–4 minutes until fragrant, if using.

Combine fruit and mix-ins in a bowl right before assembly to prevent sogginess. Do not add wet sauces—the chocolate shell should remain dry inside to avoid softening.
Chocolate Sauce

Make ganache
Heat heavy cream in a small saucepan or microwave until steaming but not boiling (about 170–180°F / 75–82°C). Pour over chopped dark chocolate in a bowl and let sit 1–2 minutes to soften.

Chill a mixing bowl and whisk or beaters. Pour cold heavy cream, add confectioners' sugar and vanilla, then whip to soft peaks using a hand mixer or whisk. Transfer to a piping bag or bowl and refrigerate until assembly.
Assembly & Serve

Place one chocolate hemisphere on a large serving platter, rim-side up so the opening faces upward and can hold fillings. If the shell won't sit flat, nestle it on a folded napkin or ring of parchment.

Pile the fruit mixture into the shell: strawberries, pineapple, blueberries, toasted almonds and tuck mini churros among the fruit. Leave a little space at the top so the lid seats without displacing filling.

Gently warm the rim of the other chocolate hemisphere by briefly touching it to a warm pan or running a warm, dry cloth along the edge to slightly melt the chocolate lip (5–10 seconds). Immediately place it rim-to-rim on top of the filled base to form a sealed piñata. Chill 5–10 minutes to set the seam.

To serve, present the Chocolate Piñata whole with a lightweight wooden mallet or covered spoon. Smash with a controlled strike to break open and reveal the filling. Alternatively, you can score a decorative line and crack open for fewer guests.

Serve pieces on plates with warm chocolate sauce drizzled over and a dollop or piped swirl of whipped cream. Garnish with extra berries and mint.

Any leftover chocolate shell can be stored in an airtight container in a cool, dry place up to 3 days; refrigerate sauce and whipped cream separately.
