    Prepare marinade

    In a medium bowl, whisk together lime juice, orange juice, olive oil, soy sauce, minced garlic, chopped cilantro, ground cumin, dried oregano, chili powder, kosher salt, black pepper and red pepper flakes until combined.

    Marinate steak

    Place flank steak in a large zip-top bag or shallow dish. Pour marinade over steak, pressing out excess air and sealing bag (or cover dish). Massage marinade into meat so it's evenly coated. Refrigerate for at least 2 hours and up to 8 hours for best flavor. If short on time, 30 minutes will still add some flavor.

    Bring to room temperature

    Remove steak from refrigerator 30–45 minutes before cooking to take the chill off, allowing more even cooking.

    Preheat grill or pan

    Preheat a grill or heavy skillet (cast-iron) over high heat until very hot. If using a grill, oil the grates or brush steak lightly with vegetable oil to prevent sticking.

    Cook steak

    Remove steak from marinade and let excess drip off. Place steak on the hot grill or skillet. Cook for 4–6 minutes per side for medium-rare (internal temp 125–130°F / 52–54°C), 6–8 minutes per side for medium. Avoid moving the steak while it sears to get a good crust.

    Rest and slice

    Transfer cooked steak to a cutting board and tent loosely with foil. Let rest 8–10 minutes to allow juices to redistribute. Slice thinly across the grain into bite-sized strips.

    Serve

    Warm tortillas on the grill or in a dry skillet. Assemble tacos with sliced carne asada, sprinkle with chopped cilantro, sliced onion and radishes if using, and serve with lime wedges.
