BBQ Chicken

    Prepare and season chicken

    Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, and smoked paprika.

    Cook chicken

    Heat 1 tablespoon olive oil in a skillet over medium-high heat. When hot, add the chicken breasts and cook 5-7 minutes per side until nicely browned and internal temperature reaches 165°F (74°C). If breasts are thick, cover and reduce heat to medium and continue cooking until done.

    Shred and toss with BBQ sauce

    Transfer cooked chicken to a cutting board, let rest 5 minutes, then shred with two forks. Return shredded chicken to the skillet or a bowl and stir in 1/2 cup barbecue sauce until evenly coated. Keep warm.

Quesadilla Assembly

    Prepare fillings

    Thinly slice the red onion into small half-moons (about 1/4 cup). Chop the cilantro finely. Combine shredded cheddar and Monterey Jack cheeses in a bowl.

    Assemble quesadillas

    Lay out 4 large flour tortillas. On half of each tortilla, sprinkle about 1/4 cup of the mixed cheeses, add a portion of the shredded BBQ chicken (about 1/4 of the chicken mixture), scatter a little sliced red onion and a pinch of chopped cilantro, then top with another 1/4 cup of cheese. Fold the tortilla over to create a half-moon.

    Cook quesadillas

    Heat a large nonstick skillet or griddle over medium heat. Add a small pat of butter (about 1/2 teaspoon) or a light brush of oil and place one folded quesadilla in the pan. Cook 2-3 minutes until the bottom is golden and crisp, then carefully flip and cook another 1.5-2 minutes until the cheese is melted and the other side is golden. Reduce heat slightly if the tortilla browns too quickly. Repeat for remaining quesadillas, adding more butter as needed.

    Rest and slice

    Remove each cooked quesadilla to a cutting board and let rest 1 minute, then slice into 3 wedges with a sharp knife or pizza cutter.

    Arrange quesadilla wedges on a platter. Garnish with additional chopped cilantro if desired and serve with sour cream, sliced avocado or guacamole, lime wedges, and extra barbecue sauce on the side.
