Bacon-wrapped Shrimp

Prep bacon and shrimp
Preheat oven to 425°F (220°C). If using a grill, preheat to medium-high. Pat shrimp dry with paper towels. Cut each bacon slice in half crosswise to make 24 shorter strips. If using toothpicks, soak them in water for at least 15 minutes to prevent burning.

Season shrimp
Place the shrimp in a bowl. Add olive oil, garlic powder, smoked paprika, salt, black pepper, and 1 tablespoon fresh lime juice. Toss gently to coat evenly.

Wrap shrimp
Take one shrimp and wrap a half-slice of bacon around the body (just behind the head toward the tail), overlapping ends slightly. Secure the bacon with a soaked toothpick pushed through bacon and shrimp perpendicular to the shrimp. Repeat for all 24 shrimp.

Arrange for cooking
Place bacon-wrapped shrimp on a wire rack set over a rimmed baking sheet (to drain fat) spaced evenly so air circulates. If baking directly on a sheet, use parchment and flip halfway through. Brush any remaining marinade lightly on shrimp.

Cook
Bake in preheated oven for 12–15 minutes, turning once halfway through, until bacon is crisp and shrimp are opaque and reach 120–135°F (49–57°C). If grilling, arrange shrimp seam-side down and grill 2–3 minutes per side until bacon is crisp and shrimp are cooked through.

Finish
Remove shrimp from oven or grill and let rest 2 minutes on the rack to firm up. Transfer to a serving platter, discarding toothpicks as desired or leaving them for guests to use.
Spicy Honey Glaze (optional)

While shrimp are cooking, whisk together honey, sriracha, soy sauce, and 1 tablespoon lime juice in a small bowl until smooth. For a thinner glaze, warm gently in a small saucepan over low heat for 1–2 minutes, stirring. During the last 1–2 minutes of cooking, brush glaze over the bacon-wrapped shrimp, then return to oven or grill briefly to set the glaze (about 1–2 minutes). Reserve some glaze for serving if desired.
Garnish & Serve

Sprinkle chopped cilantro over the finished shrimp and arrange lime wedges on the platter. Serve immediately while hot with extra glaze or dipping sauce on the side.
