Rinse rice

Place 2 cups short-grain sushi rice in a bowl. Add cold water and swish gently, then drain. Repeat 4–5 times until the rinse water runs mostly clear to remove excess starch.

Soak and cook

After rinsing, cover the rice with 240 ml fresh water and let soak for 20–30 minutes. Drain then transfer rice to a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, reduce to low heat, cover and simmer 12–15 minutes. Remove from heat and let rest, covered, 10 minutes.

Prepare sushi vinegar

While the rice cooks, combine 3 tbs rice vinegar, 1.5 tbs sugar and 1 tsp fine sea salt in a small saucepan over low heat. Stir just until sugar and salt dissolve; do not boil. Cool to room temperature.

Season rice

Transfer hot cooked rice to a wide shallow bowl (a hangiri if available). Pour the sushi vinegar evenly over the rice. Using a rice paddle or wooden spoon, cut and fold the rice gently while fanning to cool — this preserves texture and gives glossy rice. Aim for slightly warm rice. Cover with a damp towel to keep moist while preparing mackerel.

Cure with salt

Pat the mackerel fillets dry with paper towel. Sprinkle both sides evenly with about 1 tbs coarse sea salt. Place fillets on a rack or plate, cover, and refrigerate for 20 minutes. Salting firms the flesh and helps draw out excess moisture.

Rinse and quick vinegar

After 20 minutes, rinse the salt off under cold running water and pat fillets dry. Lightly brush or wipe each fillet with 2 tsp rice vinegar to tone the fish and remove any lingering salt; pat dry again.

Slice fillets

Using a very sharp knife, slice fillets into nigiri-sized pieces roughly 3–3.5 inches (7–9 cm) long and 1.5 inches (4 cm) wide, about 1/4 inch (6 mm) thick. Aim for 10–12 pieces total depending on fillet size.

Optional quick sear or finish

If you prefer a slightly smoky edge, lightly torch the skin side or top of each slice for 1–2 seconds until just warmed (do not overcook). Alternatively, brush each slice very lightly with a mixture of 2 tbs soy sauce and 1 tsp mirin, then briefly heat in a hot skillet skin-side down for 10–20 seconds to glaze. Pat dry if any excess liquid remains.

Assembly & Garnish

Portion rice

Wet your hands with cold water (to prevent rice from sticking) and take about 2 tablespoons (roughly 20–25 g) of seasoned rice per nigiri. Gently form rice into an oblong mound (about 2 inches long) by cupping and pressing lightly — don’t over-compress; rice should hold shape but remain tender.

Add wasabi

Lightly smear a thin line (about 1/8–1/4 tsp) of wasabi on the underside (skin side if present) of each mackerel slice. Adjust amount to taste.

Top rice with mackerel

Place a mackerel slice over each rice mound, pressing gently so fish adheres. If desired, add a tiny additional dab of wasabi between fish and rice for more heat.

Finish and garnish

If you prepared a soy-mirin glaze, brush a small amount on the fish for shine. Sprinkle a few toasted sesame seeds and a little thinly sliced chive or scallion over the top for color and aroma. Serve immediately with pickled ginger and extra soy sauce on the side.

Storage note

Nigiri is best eaten immediately. If you must hold assembled nigiri up to 30 minutes, keep covered and refrigerated; longer storage will degrade texture and flavor. Store unused sliced mackerel wrapped tightly and refrigerated for up to 24 hours; consume promptly.
