Method
Prep and Par-Cook Crabs
Clean and prep
If crabs are live, humanely chill them in the refrigerator for 15–20 minutes to sedate. Rinse each crab under cold water, remove any dirt from the shell. Optional: remove the apron and gills if preferred for presentation. Pat dry with paper towels.
Bring water to a boil
Fill a large pot with enough water to submerge the crabs (about 4–6 cups depending on pot size). Add 1 tablespoon kosher salt and bring to a rolling boil over high heat.
Par-cook the crabs
Carefully lower the crabs into the boiling water using tongs. Boil for 4 minutes to partially cook and set the meat (this short boil helps ensure even cooking in the oven). Remove crabs and immediately plunge into an ice bath for 2 minutes to stop cooking. Drain and pat dry.
Halve crabs for baking
Using a heavy chef's knife or kitchen shears, place each crab on a cutting board and cut in half lengthwise through the shell to expose the body cavity. Remove and discard any inedible bits (stomach sac) and rinse briefly if needed. Arrange crab halves, shell-side down, in a shallow baking dish large enough to hold them in a single layer.
Make Butter Sauce
Preheat the oven to 400°F (200°C).
Melt butter
In a small saucepan over medium-low heat, melt the 1 cup unsalted butter with 1 tablespoon olive oil to raise the smoke point. Stir occasionally and do not let the butter brown.
Deglaze and flavor
Stir in 2 tablespoons dry white wine (optional) and let it reduce for about 1 minute. Then add the Dijon mustard, smoked paprika, lemon zest, lemon juice, chopped parsley, sea salt, black pepper, and red pepper flakes. Taste and adjust seasoning.
Keep warm
Remove the butter sauce from heat and keep warm. If the sauce solidifies slightly, rewarm gently before spooning over crabs.
Assemble and Bake
Spoon butter over crabs
Using a spoon or small ladle, generously spoon the warm butter sauce into the exposed meat cavities and over the surface of each crab half so the meat is well coated. Reserve about 2–3 tablespoons of sauce for finishing.
Bake
Place the baking dish in the preheated oven and bake at 400°F (200°C) for 10–12 minutes, until the crab meat is opaque, hot throughout, and the butter is bubbling. If you want a lightly browned top, switch to broil on high for the final 1–2 minutes—watch closely to avoid burning.
Serve
Transfer the crab halves to serving plates or leave in the baking dish for family-style service. Serve with lemon wedges and crusty bread or steamed rice to soak up the butter sauce. Provide seafood crackers or picks if desired. Enjoy while hot.
