Wash the white peach, remove the pit, and cut a thin crescent slice (about 1/8" / 3 mm thick). Reserve 1 small slice per serving. If peaches are very ripe, handle gently to keep shape.

Remove the tough outer layers of the lemongrass stalk and bruise the lower 2–3 inches with the back of a knife to release aromatic oils. Trim to a 3–4 inch piece that can sit in the glass as a stirrer/garnish.

Prepare lemon slice by cutting a thin wheel or a long peel twist. Keep ready.

Chill the bottle of Wyncroft Shou Blanc in the refrigerator to 7–10°C (45–50°F) for at least 2 hours prior to serving. If short on time, place the bottle in an ice bucket for 20–30 minutes.

If serving still (no spritz): Place 1–2 ice cubes in a white wine glass only if you prefer a colder, slightly diluted experience. Add the bruised lemongrass stalk and the peach slice to the glass.

Hold the bottle at the base, tilt the glass, and pour 150–180 ml of Wyncroft Shou Blanc per serving (about 1 standard wine pour). Aim to pour gently so the aromatics remain intact.

For a lighter, spritz-style serve: fill a large wine glass with 3–4 ice cubes, add the peach slice and bruised lemongrass. Pour 100 ml (about 2/3 standard pour) of Wyncroft Shou Blanc, then top with 120 ml club soda. Stir gently once to combine. Taste and add up to 5 ml simple syrup if you prefer a touch of sweetness.

Garnish with the lemon wheel or twist on the rim of the glass. Present immediately so the citrus and lemongrass aromatics complement the wine’s white-peach and citrus notes.

Encourage sipping slowly to enjoy the wine’s bright citrus, lemongrass, and white-peach flavors. Refill with 150–180 ml pours as desired; keep remaining bottle chilled between pours.
