Prepare oysters

Rinse the shucked spiny oyster meats gently under cold water to remove any residual grit. Pat dry thoroughly on paper towels. Place oysters in a shallow bowl.

Season

In a small bowl combine sea salt, granulated sugar, smoked paprika and black pepper. Drizzle the olive oil and lemon juice over the oysters, then sprinkle the dry seasoning mix evenly. Toss gently so each oyster is coated; allow to rest 5–10 minutes so flavors marry.

If cold-smoking at home: place 1/4 cup smoking chips in a small foil packet or smoking tray and heat according to your cold-smoker or stovetop smoker instructions until it produces smoke but minimal heat. Arrange the seasoned oysters on a wire rack set over a tray (so they do not touch liquid). Place the smoking tray/chips below and cover the setup so smoke circulates around oysters without cooking them. Cold-smoke for 10–20 minutes depending on desired smokiness. Keep temperature below 80°F / 27°C to preserve the raw, sweet texture.

Hot-smoke alternative

If you do not cold-smoke, you can briefly hot-smoke or use a smoking gun for 3–5 minutes. For hot-smoking, preheat smoker to 160–180°F (71–82°C), smoke oysters 6–8 minutes — this will warm them slightly and impart smoke while keeping a plump texture. Remove as soon as you notice the desired smoke aroma; do not overcook.

Finish & Service

Transfer smoked oysters immediately to a chilled serving plate or on half shells if available. Spoon any resting juices from the bowl over the oysters.

Sprinkle microgreens or chopped parsley on top for color and bright herb note. Finish with a tiny scatter of flaky sea salt to enhance texture and flavor.

Optional: For an extra layer of smoky olive aroma, lightly brush or spray each oyster with 1/4 teaspoon cold-smoked olive oil or smoked olive oil spray.

Serve with lemon wedges alongside so diners can squeeze fresh lemon to taste. Recommend serving chilled or just-warm; oysters should be plump, sweet, with a light lingering smoky finish.

Use only very fresh, high-quality oysters from a trusted source. Because these are raw or lightly smoked, keep them refrigerated and consume within 24 hours. Cold-smoking does not cook shellfish; avoid if immune-compromised or serving to vulnerable guests.
