Method
Prep Oysters
Keep the oysters chilled until ready to use. Carefully shuck each spiny oyster, preserving as much liquor as possible. Rinse briefly in cold water if necessary to remove shell fragments and pat the shells dry with a towel. Place each oyster in its half shell on a tray packed with crushed ice to keep them level and cold.
Season each oyster lightly with sea salt and a small pinch of freshly cracked black pepper. Reserve the tray in the refrigerator while you prepare the glaze and smoker.
Make Glaze
Combine and warm
In a small saucepan over low heat, melt the unsalted butter. Add the honey, lemon juice, soy sauce, smoked paprika and crushed pink peppercorns. Stir gently until combined and warm (do not boil). Taste and adjust balance: it should be lightly sweet with a touch of savory and smoky notes to complement, not overwhelm, the oysters.
Remove from heat and keep warm. The glaze will be brushed onto the oysters just before and briefly during smoking to build a glossy finish.
Cold Smoking
Set up a cold-smoking arrangement: use a small smoker or a covered metal tray that can hold wood chips and allow smoke to circulate but keep temperature under 90°F / 32°C. If using a stovetop smoking gun, fill with soaked applewood/cherry chips. If using a DIY cold-smoke box, ensure ice is packed beneath the oyster tray (2 cups) to keep them chilled and prevent cooking.
Place the shucked oysters on the chilled tray. Using a brush, lightly coat each oyster with a thin layer of the warm glaze (about 1/4 teaspoon per oyster).
Introduce smoke: ignite or run the smoking gun with the soaked wood chips and fill the smoking chamber with smoke. Cover tightly and allow oysters to cold-smoke for 7–12 minutes depending on desired smoke intensity. Aim for a delicate, light smoke that complements the oysters’ sweetness. Avoid prolonged smoking so the finish remains light and lingering.
Halfway through smoking (about 4–6 minutes), quickly open the chamber, brush a second thin glaze layer onto each oyster, and reseal to finish smoking. This builds a subtle glossy finish without making them sweet or sticky.
Finish & Serve
Carefully remove the tray from the smoker. Let oysters rest for 1–2 minutes to settle. Taste one and adjust by sprinkling a tiny pinch of flaky sea salt if needed, or a whisper (a few grains) of smoked sea salt for extra aroma.
