Prepare shallot-chive crème fraîche

Finely mince half a small shallot (about 1 tablespoon) and finely chop the fresh chives. In a small bowl, combine 4 tablespoons crème fraîche, the minced shallot, 1 tablespoon chopped chives, 1 teaspoon extra-virgin olive oil, juice of half a lemon (about 1/2 teaspoon to 1 teaspoon, adjust to taste), and a pinch of fine sea salt. Stir gently to combine. Taste and adjust acidity or salt — crème fraîche should be slightly tangy to complement the saline caviar but not overpower it.

Temper the caviar

Remove the caviar from refrigeration 5–10 minutes before serving so it’s not ice-cold; this brings out flavor and maintains pearl integrity. Keep the caviar in its tin or jar set on crushed ice if you will not serve immediately to maintain a chilled but not frozen temperature.

Butter finish for toasts

In a small skillet over low heat, melt 2 tablespoons unsalted butter until foaming subsides and butter is lightly nutty but not browned (about 1–2 minutes). Remove from heat and let cool slightly to warm temperature (not hot). Brush or lightly spread a thin film of the warm butter onto each blini or toast. The warm butter provides aroma and a luxurious mouthfeel beneath the caviar.

Assemble

Place a buttered blini or potato rösti on a serving plate. Pipe or spoon about 1/2 tablespoon of the shallot-chive crème fraîche onto each blini. Using a mother-of-pearl spoon (or a nonreactive spoon), gently scoop about 1/4 ounce (approximately 1 tablespoon) of Osetra caviar and place it on top of the crème fraîche. Finish with a few flakes of freshly cracked black pepper and, if desired, a tiny snip of chive for color. Serve immediately with lemon wedges on the side — a light squeeze is optional and should be used sparingly so as not to wash out the caviar’s flavor.

Presentation & serving tips

Serve the caviar chilled on a bed of crushed ice if you have extra caviar to present. Provide small mother-of-pearl or plastic tasting spoons (no metal) so metal taste does not alter the caviar. Offer additional blinis or crisp toasts so guests may take another bite. Keep additional crème fraîche in a chilled dish. Do not over-acidify or over-season — Osetra Platinum Holland has savory, firm pearls and a nuanced marine flavor that should remain the focus.

If using store-bought blini: warm them briefly in a hot (350°F / 175°C) oven for 3–4 minutes or in a hot dry skillet 30–45 seconds per side. If serving crispy potatoes: reheat or pan-fry according to package directions until crisp and warm. Avoid overheating; they should be warm, not hot, when topped with caviar.

Arrange blinis or potatoes on a chilled platter. Provide lemon wedges alongside and a small bowl for any used utensils. Encourage guests to taste the caviar with minimal added components to appreciate its texture and briny-savoury profile.
