Chill everything

Place the tin of Osetra caviar in the coldest part of the refrigerator for at least 30 minutes before serving. Chill small mother-of-pearl spoon(s) or non-metal serving spoons to avoid metallic taste.

Prepare crème fraîche mixture

In a small bowl, gently fold together the crème fraîche (3 tbsp), the finely grated Parmesan (1 tbsp) and the snipped chives (1 tbsp). Zest half a lemon directly into the bowl and add 1/2 teaspoon of lemon juice. Season lightly with flaky sea salt (1/4 tsp) and freshly ground white pepper (1/8 tsp). Taste and adjust — the mixture should be bright, slightly tangy, and not overpowering the caviar.

Butter and warm

Warm 2 tablespoons of unsalted butter in a small saucepan over low heat until just melted and fragrant (do not brown). Remove from heat and let cool very slightly. This warmed butter will be used to lightly brush toasts and (optionally) to create a gentle contrast when plating; do not combine butter with caviar.

Portion the caviar

Open the chilled tin carefully. Using the chilled mother-of-pearl spoon, transfer the Osetra caviar into a chilled serving bowl, keeping motion slow and gentle to preserve roe integrity. Portion roughly 1/4 oz (about 1 tablespoon) of caviar per blini for 12 pieces; reserve the remainder in the chilled tin until ready to serve.

Prepare toasts or blini

If using store-bought blini or toasting rounds, warm them lightly: preheat oven to 300°F (150°C). Arrange blini on a baking sheet and brush very lightly with the reserved softened butter (about 2 tbsp across 12 pieces). Warm in oven for 3–5 minutes until just warmed through and edges are slightly crisp — do not brown. If making homemade blini, cook per your recipe, keep warm, and serve immediately.

Assemble each portion

On each warmed blini or toast, spread a thin layer (about 1/2 tsp) of the Parmesan–crème fraîche mixture. Top with approximately 1/4 oz (heaping 1 tsp) of Osetra caviar. Finish each with a tiny drizzle of the warmed butter if desired (a few drops), a single snip of chive or a microgreen/dill sprig, and a very light pinch of flaky sea salt to highlight the flavor. A whisper of fresh lemon zest over the top can be added to brighten, if desired.

Serve

Arrange the prepared caviar toasts on a chilled platter. Serve immediately with the remaining caviar and chilled mother-of-pearl spoon. Encourage guests to taste the caviar on its own first, then on the toast with the Parmesan–crème fraîche to experience the contrast of rich, nutty Osetra against the umami parmesan and tangy crème fraîche.
