Smoked Chargrilled Sardine Tails
Prepare Sardine Tails
Rinse the sardine tails briefly under cold water and pat dry with paper towels. Trim if needed so tails are uniform in length. Place them in a shallow dish.
Season and Marinate
Combine extra-virgin olive oil, fine sea salt, black pepper, smoked paprika, sliced garlic and lemon juice in a bowl. Whisk until emulsified. Pour 3/4 of the mixture over the sardine tails, turning gently to coat each piece. Cover and refrigerate to marinate 20–30 minutes (no more than 1 hour). Reserve remaining oil mixture for finishing.
Preheat Grill and Prepare Smoker
If using a charcoal or gas grill, set up for medium-high direct heat (230–260°C / 450–500°F). For an added smoky note like a Michelin-style touch, prepare a small smoking pouch: drain soaked wood chips, wrap in foil, poke holes and place directly on coals or over burner. Allow smoke to build for 5 minutes before grilling. Alternatively, use a stovetop smoker or smoking gun to cold-smoke briefly (see note).
Chargrill the Sardine Tails
Oil the grill grates lightly or brush sardine tails with the reserved oil. Place tails directly on the hot grates, skin-side down if skin remains, spacing them so heat circulates. Cook 1.5–2 minutes per side until edges char lightly and flesh is opaque — avoid overcooking. If using a small smoke pouch, maintain light smoke while grilling for 3–5 minutes total to impart a delicate smoke without drying the fish.
