Prepare sardines
If using whole sardines, rinse and pat dry. Remove heads and guts if present; fillet if desired but keep tails attached so each piece has a tail. Dry fish thoroughly with paper towels — moisture prevents good char.
Season both sides of the sardine tails with 1 1/2 tsp fine sea salt and the freshly ground black pepper. Drizzle 2 tbs EVOO over the sardines and toss gently to coat. Let rest at room temperature while you prepare the smoke/marinade (10–15 minutes).

Make the smoked marinade
In a small bowl combine smoked paprika, cold-smoke seasoning or 1 tsp liquid smoke, grated garlic, lemon zest, lemon juice and chopped parsley. Whisk together with the remaining 4 tbs EVOO until emulsified.
Brush or spoon the smoked marinade over both sides of the sardine tails, reserving a small amount (about 1 tsp) for finishing. Allow sardines to sit for 10 minutes to pick up smoke flavor; do not marinate much longer to avoid 'cooking' the fish with acid.
Optional quick smoke (if you have a stovetop smoker or smoking gun)
For a stronger, chef-style smoked character, place sardine tails in a shallow pan, cover and introduce cold smoke for 3–6 minutes. Remove and let rest 2 minutes before grilling. If no smoker is available, the smoked paprika and liquid smoke provide the desired effect.

Preheat grill
Preheat a charcoal or gas grill to high (450–500°F / 230–260°C). If using a cast-iron grill pan, heat until very hot and lightly coat with oil to prevent sticking.
Wipe excess marinade from sardines so they don’t drip and flare up. Arrange sardine tails on the hot grates or pan, skin side down if tails retain skin, leaving a little space between pieces for even char.
Chargrill for 1.5–2 minutes per side — you want a good sear and slight blistering but the flesh should remain moist. Flip carefully with a thin spatula or fish turner and grill the other side for another 1–2 minutes. Total cook time 3–4 minutes depending on size.
Remove from heat when the fish is opaque and flakes easily. Transfer to a warm platter.
Finishing & Service
Finish and plate
Drizzle the reserved 1 tsp of smoked marinade and 2 tbs finishing EVOO evenly over the hot sardine tails. Sprinkle flaky sea salt to taste. Garnish with microgreens or baby herbs and serve with lemon wedges for squeezing just before eating.
Serve immediately while hot as an appetizer or part of a composed tasting plate. Suggested serving: 2 sardine tails per person for a small bite, 4 per person as an appetizer.
