Rinse oysters, place in a steamer or pot with a small amount of water, cover and steam until shells open (about 4–6 minutes). Remove oysters to a bowl, reserve the oyster liquor by straining it through a fine mesh (you should have ~1 tbsp). Remove oyster meat from shells and set aside.

Steam and reserve

Pour 12 fl oz of stout beer into a small saucepan and warm over low heat until just simmering (do not boil). Warming concentrates aroma and helps integrate added ingredients.

Add the reserved 1 tbsp oyster liquor and 1/2 tsp oyster sauce to the warmed stout. Stir gently to incorporate. Taste and adjust — oyster sauce adds salinity and umami; the goal is a gentle briny note, not overpowering saltiness.

Lower heat to very low. Stir in 1 tbsp milk stout or lactose syrup to add creaminess. If using milk stout instead of lactose, add the liquid milk stout directly and reduce warmed stout volume slightly so final drink remains balanced.

Whisk in 5 g softened unsalted butter and 1 tbsp heavy cream, a little at a time, until fully emulsified. Keep the mixture warm and gently whisk — this creates a silky mouthfeel and smooths the beer's carbonation and bitterness. Do not boil once butter and cream are added to prevent separation.

Add 3 oyster meats to the pan briefly (30–45 seconds) just to warm them through and infuse a touch more oyster flavor. Remove oysters and set aside; you will return one for garnish and can chop remaining for incorporation if desired.

Turn off heat. Stir in 1/4 tsp fresh lemon zest to brighten the stout's heavy notes. Add a pinch of freshly ground black pepper and a pinch of flaky sea salt, tasting to ensure the balance is briny but not overly salty.

If the texture needs smoothing, pass the mixture through a fine sieve into a warmed glass or small serving pot to remove any solids and ensure silkiness.

Place one warmed oyster meat in the serving glass or shallow bowl, pour the warm oyster-infused stout over it so the oyster sits in the liquid. Garnish with a few microgreens or frisée if using. Serve immediately while warm.
