Prepare produce and proteins

Wash and dry the lettuce leaves; slice the tomato into 1/4-inch rounds; pit and thinly slice the avocado and toss slices lightly with a squeeze of lemon to prevent browning. Lay out the sliced turkey, ham and cheese so they’re ready to assemble.

Crisp the bacon

In a medium skillet over medium heat, cook the bacon strips until deep golden and crispy, about 6–8 minutes, turning as needed. Transfer to a paper towel-lined plate to drain.

Assemble the club layers

Place three slices of bread on your work surface to form the base of three sandwiches. Spread about 1 tablespoon of the Dark Pocket Spread evenly over each base slice (see next section for spread). Layer 3–4 oz smoked turkey on each, then 2 slices of provolone, 2 strips of bacon, tomato slices (2–3 rounds), a lettuce leaf, 2–3 slices of avocado, a drizzle of pickled pepper slices, and a light pinch (about 1/8 tsp) of kosher salt and a grind of black pepper. Top with the second bread slice and repeat a second layer if you want a double-decker club (optional). Finish with the final bread slice and spread 1 tablespoon of Dark Pocket Spread on the top.

Butter and grill (optional — to make a warm, crisp exterior)

Lightly butter the outside of each sandwich (about 1 teaspoon per side). Heat a large nonstick skillet or griddle over medium-low heat. Place sandwiches buttered-side down and cook until golden brown and crisp, about 3–4 minutes. Butter the top side or flip and butter the other side, then cook 3–4 minutes more until both sides are golden and cheese has melted. If using a panini press, press 3–4 minutes until warmed through and crisp.

Slice and serve

Let the sandwiches rest 1–2 minutes, then cut each into quarters on the diagonal to make classic club triangles. Garnish with a sprinkle of toasted sesame or poppy seeds if desired. Serve immediately.

For the Dark Pocket Spread (mild, savory — “East Dark Pocket”)

In a bowl, combine mayonnaise, Dijon mustard, whole-grain mustard, smoked paprika, minced garlic, chopped cornichons, honey, lemon juice, black pepper and salt. Whisk thoroughly until smooth and homogenous, scraping sides of the bowl. Taste and adjust seasoning: add up to 1/2 teaspoon more honey if you prefer sweeter, or another pinch of salt if needed. Refrigerate spread at least 15 minutes to let flavors meld before using.

For finishing and to serve

If serving with chips or a side salad, plate sandwiches with your preferred sides. Provide extra Dark Pocket Spread on the side for dipping or spreading, and offer pickles or extra pepper slices.
