Shuck and reserve liquor

Keep oysters cold. Using an oyster knife, carefully shuck 24 oysters over a bowl to catch the liquor. Set oysters in half shells on a tray with a bit of their reserved liquor to keep them moist. Strain the reserved liquor through a fine sieve into a small bowl and refrigerate until needed.

Optional quick brine

Prepare a mild brine (next section) if oysters were not extremely fresh or you want a slightly seasoned interior. This step is optional for farm-fresh oysters.

Make the brine

In a saucepan combine 500 ml cold water, 3 tbs kosher salt, 2 tbs brown sugar, 1 tsp black peppercorns, 1 tsp whole allspice and 2 bay leaves. Bring to a simmer just to dissolve salt and sugar, then remove from heat and cool completely to room temperature, then chill until cold (about 30–45 minutes).

Brief brine (optional)

If using the brine: place oysters (in shells or meat only) into a shallow container and cover with chilled brine for 5 minutes to lightly season—do not exceed 10 minutes or the oysters will become overly salty and firm. Remove oysters and drain on paper towels. Pat shells dry so they sit stable during smoking.

Prepare the smoker

Preheat your smoker to a low temperature: 160–180°F (70–80°C). If using a stovetop or small smoker, set up for gentle cold/low smoking so internal oyster temperature stays under 140°F (60°C) to avoid overcooking. Soak 80 g maple chips for 30 minutes, drain, and load according to your smoker's instructions to produce a steady light smoke.

Load oysters

Arrange oysters in their half shells (or on small shallow stainless trays) so each cup holds its liquor. If oysters were brined and you drained them, add 1/2–1 tsp reserved oyster liquor back into each shell to preserve moisture and flavor. Place trays into the smoker on a level rack.

Cold-to-warm smoking

Smoke the oysters with maple wood at 160–180°F (70–80°C) for 20–30 minutes for a light smoky finish. For a stronger smoke, extend to 35–45 minutes but monitor texture carefully—oysters should become opaque and slightly firm but still tender. Total internal temperature should remain below 140°F (60°C) for a more delicate texture.

Prepare maple glaze

While oysters smoke, combine 60 ml pure maple syrup and 30 g unsalted butter in a small saucepan over low heat until the butter melts and the mixture is glossy. Stir in 15 ml fresh lemon juice and 5 ml hot sauce if using. Keep warm but do not boil.

Glaze and finish

In the last 3–5 minutes of smoking, remove the oysters or open the smoker and brush each oyster lightly with the maple glaze. Return to the smoker just long enough to set the glaze (2–3 minutes) and pick up a caramelized sheen. Remove oysters from the smoker.

Plating & Garnish

Finish and serve

Transfer oysters to a serving platter. Spoon any accumulated juices from the tray over the oysters. Sprinkle minced fresh parsley over the top. Serve immediately with lemon wedges on the side and additional hot sauce if desired. Smoked oysters are best enjoyed warm or at room temperature.

Storage

Cool completely, cover, and refrigerate up to 48 hours. Reheat gently in a low oven (275°F/135°C) for 5–8 minutes or briefly return to smoker to rewarm; do not overcook.
