Method
Prepare and poach the razor clams
Clean and trim
Rinse the razor clams thoroughly under cold running water to remove sand. If using whole clams in shells, open, remove meat and trim any tough parts. Pat the meat dry with paper towels and cut into bite-size pieces if very large.
Quick brine (optional)
Place clam meat in a bowl and sprinkle with the 1 tbs fine sea salt (or 1/2 tbs coarse if using coarse salt) and let sit 10–15 minutes to draw out excess moisture and any remaining grit. Rinse briefly and pat dry. This step improves texture and reduces grit.
Poach
In a shallow saucepan combine white wine, water, bay leaf and peppercorns. Bring to a gentle simmer. Add the clams and poach gently for 1–2 minutes until just cooked through (clam meat will firm but remain tender). Do not overcook. Remove clams with a slotted spoon and let cool on a tray.
Cold smoking (to impart smoky flavor similar to Conservas de Cambados)
Prepare smoker
Set up a small cold-smoker or smoking gun. You want low heat so you are infusing smoke without cooking further. If using a smoking gun: place the cooled poached clams in a shallow bowl or tray and cover with a dome or tight cling film with a small vent for the smoke tube.
Smoke
Add the neutral oil or a small pinch of wood chips (apple or oak) to the smoker. Generate smoke and expose the clams for 10–20 minutes depending on desired intensity. Aim for a delicate smoky note like pimentón rather than heavy char. If you don't have a smoker, you can lightly toss the clams with 1 tsp smoked Spanish paprika and proceed to the next step.
Assemble conservas in jars
Prepare oil
In a small saucepan gently warm 1 cup extra-virgin olive oil with the sliced garlic and smoked paprika over very low heat for 3–4 minutes to infuse, keeping the temperature below 140°F / 60°C (do not fry the garlic). Remove from heat and cool slightly.
Pack jars
Place a few parsley sprigs (if using) and a bit of lemon zest into each sterilized jar. Arrange smoked razor clam pieces into jars, leaving about 1/2 inch (1 cm) headspace. Divide the garlic and paprika-infused oil among the jars so the clams are fully submerged. Top with additional olive oil if needed (use the extra 1/2 cup). Ensure no air pockets remain.
Seal and rest
Wipe rims clean, seal jars tightly and let cool to room temperature. Refrigerate for at least 24–48 hours before eating to allow flavors to meld. These refrigerated conservas will keep 10–14 days; for longer storage follow proper canning/botulism-safe heat-processing procedures (not covered here).
Serve
Serve the Conservas Oyster de Co Cambados chilled or at cool room temperature. Spoon clams and oil onto toasted rustic bread or use as a tapas component. Garnish with a little extra parsley, a squeeze of lemon, and a dusting of smoked paprika if desired.
