Preparing and Cooking Razor Clams

Clean clams

Rinse the razor clams under cold water to remove sand and grit. If still in shells, open just enough to remove the dark stomach and the tough siphon sheath if present; keep the meat whole. Rinse again and pat dry with paper towels. Trim any excessively tough bits but leave the clams intact as large pieces.

Blanch clams

Bring a large pot of salted water (about 2 liters) to a rolling boil. Add the razor clams and blanch for 30–45 seconds — just until they curl slightly and are opaque. Remove immediately with a slotted spoon and transfer to an ice bath to stop cooking. Drain and reserve.

Making the Conserva (Preserving Liquid) and Packing

Prepare aromatics and liquid

In a wide sauté pan or shallow saucepan, combine the olive oil, white wine, white wine vinegar, smashed garlic, thyme sprigs, bay leaves, peppercorns, lemon zest strips, coarse sea salt, sugar, and smoked paprika. Warm gently over medium-low heat until small bubbles form around the edge (do not boil) and the garlic becomes fragrant, about 5–7 minutes. Taste and adjust seasoning — the liquid should be savory with a bright acidity and a touch of sweetness.

Pack jars

If you plan to store the conserva, use sterilized small jars (200–250 ml). Place a bay leaf and a thyme sprig in the bottom of each jar. Tuck 3–4 whole blanched razor clams per jar, depending on size, leaving a 1–1.5 cm headspace. Divide the garlic, peppercorns, and lemon zest among the jars.

Pour hot oil mixture

While the oil mixture is hot (but not boiling), strain it through a fine sieve into a heatproof jug to remove large solids, then pour the warm oil and wine-vinegar emulsion over the clams until they are fully submerged and headspace is about 0.5–1 cm. Tap jars gently to release air bubbles and ensure no clams are exposed. Wipe rims, seal tightly, and let cool to room temperature.

Short cure / storage

For immediate eating, refrigerate the jars for at least 12 hours to allow flavors to meld; 24–48 hours is ideal. For longer shelf life (1–2 months refrigerated), ensure jars are kept cold and clams remain fully submerged in oil. Note: this recipe is a conserva-style preparation intended for refrigeration and not for long-term room-temperature canning unless processed following a tested canning method.

Finishing & Serving

When ready to serve, remove clams from the fridge and let come to cool-room temperature for about 20 minutes. Spoon a little of the infused oil over toasted bread, place 2–3 razor clams on each slice, sprinkle with chopped parsley and a pinch of smoked paprika if desired, and serve with lemon wedges to squeeze over. Serve as an appetizer or as part of a conservas tasting plate.
