Prepare angulas
If using fresh angulas: rinse gently in cold water and drain in a fine sieve. Pat very gently with paper towel to remove excess moisture. If using jarred angulas, drain liquid and gently rinse once with cold water, then drain thoroughly.
Infuse the oil
Place a small heavy-bottomed saucepan over low heat. Add the extra-virgin olive oil, sliced garlic, dried chile flakes (or rehydrated guindilla/ñora), smoked paprika (if using) and a pinch of sea salt. Warm the oil gently for 5–7 minutes — the goal is to infuse the flavors without frying the garlic to brown. Keep the oil at a gentle shimmer below a simmer.
Cook angulas briefly
Increase heat very slightly so the oil is warm but not boiling. Add the angulas to the warm oil in a single layer. Stir gently with a long spoon for 1–2 minutes until the angulas are warmed through and opaque but not broken up. This is just a brief warming — overcooking will make them rubbery.
Season and cool
Remove the pan from heat. Stir in the remaining coarse sea salt (if needed to taste), freshly ground black pepper, lemon zest and chopped parsley. Allow the mixture to cool in the oil to room temperature so flavors meld (about 15–20 minutes).
Jar and store
Transfer the angulas and oil into sterilized jars, making sure the angulas are fully submerged under oil. Seal and refrigerate. For best flavor, let rest 24 hours before eating. Consume within 7–10 days refrigerated. (If long-term preserving is desired, follow tested canning/preservation procedures for safety.)
To serve
Lightly toast the bread slices until golden and crisp at the edges.
Enjoy as a tapa or small plate. Each jar yields multiple servings; reheat gently if preferred (in warm oil for 30–60 seconds) but avoid high heat.
