Brew strong Nilgiri tea

Bring 1.5 liters filtered water to a near boil (about 95°C / 203°F). Remove from heat and add 60 g loose Nilgiri black tea leaves. Steep for 8–12 minutes to make a robust, highly astringent brew suitable for fermentation. Longer steeping extracts more tannins which feed the fermentation and give structure.

Strain the tea leaves through a fine mesh sieve or cloth into a heatproof container. Discard the spent leaves.

Sweeten the tea

While the tea is still warm (below 40°C / 104°F to avoid killing the starter culture), stir in 180 g raw cane sugar until fully dissolved. Cooling the sweetened tea to room temperature (20–25°C / 68–77°F) is important; use an ice bath to speed this if needed.

Combine starter and culture

When the sweetened tea is at room temperature, pour it into the clean 3 L glass fermentation vessel. Add 250 ml starter liquid (previously fermented tea or unpasteurized vinegar). Gently place the SCOBY on the surface of the tea with clean hands or a nonmetal utensil. The SCOBY may sink initially and should rise within a day or two.

Cover the vessel with a breathable cloth or paper towel secured with a rubber band. Place the vessel in a warm, dark place (20–28°C / 68–82°F) where it won’t be disturbed and where direct sunlight is avoided.

Primary fermentation

Allow the tea to ferment undisturbed for 7–14 days depending on taste and ambient temperature. Check beginning at day 7: taste the liquid with a clean spoon. The tea should develop a pleasant acidity, reduced sweetness, and a slight effervescence. For a milder ferment, stop earlier; for tangier, allow longer. Record the day you start so you can reproduce the preferred flavor next time.

When fermentation reaches the desired balance of sweetness and acidity, carefully lift the SCOBY and set aside with about 200–250 ml fermented tea to use as starter liquid for the next batch. Reserve for future batches if desired.

Flavoring & Finish (optional) and Bottling

Optional flavor infusion

If you want flavored Acea Nilgiri de Piedra, prepare a secondary infusion: combine torn mountain herbs (6 g), sliced ginger (15 g) and lemon zest from 1 lemon in a heatproof jar. Pour 250 ml of the finished fermented tea (cooled to room temperature) over the herbs and steep for 2–6 hours in the refrigerator for a bright fresh note. Taste periodically; remove solids when desired intensity is reached.

Alternatively, lightly muddle a small amount of herbs and add directly to bottles with a thin slice of ginger and a teaspoon of fresh lemon juice per 500 ml bottle for a fresher, more aromatic profile.

Bottle for carbonation

Strain the finished fermented tea through a fine sieve into clean, airtight bottles (leave ~2–3 cm headspace). If you performed the optional infusion, combine the infused liquid with the remainder of the fermented tea before bottling. Seal the bottles tightly to encourage natural carbonation during conditioning.

Secondary conditioning

Leave bottles at room temperature for 2–5 days to develop natural carbonation (pressure will build). Check bottles daily for carbonation level — gently open one to test. When desired fizziness is reached, move bottles to the refrigerator to slow fermentation and preserve flavor.

If you prefer a still beverage or want to avoid overpressurization, dilute the fermented tea with up to 250 ml filtered water before bottling and refrigerate immediately.

Serve

Serve chilled over ice with optional fresh herb sprig and a twist of lemon. Store refrigerated bottles for up to 2–4 weeks; discard bottles that show excessive swelling, off-smells, or visible mold growth on the SCOBY or liquid.

Sanitation & Maintenance

Clean and sanitize all equipment before use with hot soapy water and a final rinse with boiling water or a food-safe sanitizer. Avoid metal contact with the SCOBY and fermented tea when possible to prevent unwanted reactions.

Keep a covered, cool portion of starter liquid and one healthy SCOBY to start future batches. Replace any SCOBY that develops fuzzy mold (fuzzy, colored growth with defined edges) — discard the batch and sanitize equipment if mold appears.
