Prepare the Filling

In a bowl, mix the sweet goat cheese and chopped black mission figs until combined. Set aside.

Make the Ruby Port Reduction

In a saucepan, combine the ruby port wine and sugar. Bring to a boil over medium heat and then reduce to low, simmering until reduced by half and syrupy, about 10-15 minutes. Remove from heat and let it cool.

Make the Beignet Dough

In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, egg, and melted butter. Combine the wet and dry ingredients until just mixed.

Fry the Beignets

Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Using a spoon, drop small amounts of dough into the hot oil, frying until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Fill the Beignets

Using a pastry bag or a small spoon, carefully fill each beignet with the goat cheese and fig mixture.

Serve

Drizzle the warm beignets with the ruby port reduction and serve immediately.
