Prepare the Sweet Potatoes

Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes into bite-sized pieces. Toss them with olive oil, salt, and pepper, then spread them out on a baking sheet.

Roast the Sweet Potatoes

Roast the sweet potatoes in the preheated oven for about 25-30 minutes, or until tender and golden brown, stirring halfway through.

Marinate the Pork

While the sweet potatoes are roasting, marinate the Berkshire pork chops with Thai chili paste, lime juice, salt, and black pepper. Let them sit for about 15 minutes.

Grill the Pork

Preheat your grill to medium-high heat. Grill the marinated pork chops for about 6-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

Prepare the Cucumber

While the pork is grilling, thinly slice the Persian cucumber and set aside.
