Fresh Bacon Preparation
Prepare the Pork Belly
Preheat the oven to 150°C (300°F). Score the skin of the pork belly in a crosshatch pattern. Rub the pork belly with salt, black pepper, and ground cardamom. Place it in a roasting pan and cover with foil. Roast in the oven for about 2.5 to 3 hours or until tender.
Make the Curried Garbanzo Bean Purée
In a blender or food processor, combine the garbanzo beans, coconut milk, curry powder, lemon juice, and a pinch of salt. Blend until smooth. Adjust the seasoning to taste and add water if necessary to reach desired consistency.
Finish the Pork Belly
After the pork belly has roasted for the recommended time, remove the foil and increase the oven temperature to 220°C (425°F). Roast for an additional 30 minutes or until the skin is crispy and golden brown.
Serve
Let the pork belly rest for 10 minutes before slicing. Serve slices of the crispy pork belly on a plate with a generous dollop of the curried garbanzo bean purée.
