In a large mash tun, combine the malted barley and hot water. Maintain a temperature of about 65-68°C (149-155°F) for 60 minutes to convert the starches into sugars.

Mashing

After mashing, drain the liquid (wort) from the mash tun and rinse the grains with hot water to extract as much sugar as possible.

Lautering

Transfer the wort to a kettle and bring to a boil. Add the hops to the kettle according to your desired bitterness and flavor profile. Boil for 60 minutes.

Boiling

After boiling, cool the wort rapidly to about 20°C (68°F) using a wort chiller.

Cooling

Transfer the cooled wort to a fermentation vessel and add the yeast. Seal the vessel and allow it to ferment for 1-2 weeks at a controlled temperature.

Fermentation

Once fermentation is complete, transfer the beer to bottles or kegs for carbonation. If bottling, add a small amount of sugar to each bottle to promote carbonation.

Bottling

Allow the beer to condition for another 1-2 weeks before enjoying. Chill and serve cold.
