Method
Dark Chocolate Mousse
Melt Chocolate
Melt dark chocolate in a double boiler and let it cool slightly.
Prepare Gelatin
Soak gelatin sheets in cold water until softened, then dissolve in warm chocolate.
Whip Cream
Whip heavy cream to soft peaks and fold into the chocolate mixture.
Chill
Pour into a mold and chill until set, about 2 hours.
White Chocolate Orange Mousse
Melt White Chocolate
Melt white chocolate in a double boiler, then let it cool.
Prepare Gelatin
Soak gelatin sheets in cold water until softened, then dissolve in warm chocolate.
Whip Cream
Whip heavy cream to soft peaks and fold into the white chocolate mixture.
Combine
Add orange zest and juice, and gently mix.
Chill
Layer over dark chocolate mousse and chill until set, about 2 hours.
Sesame Tuile
Mix Ingredients
Combine sesame seeds, flour, powdered sugar, and melted butter in a bowl.
Add Egg Whites
Stir in egg whites until a smooth batter forms.
Bake
Spread thinly on a baking sheet and bake at 180°C (350°F) until golden, about 10 minutes.
Cool and Shape
Let cool slightly, then shape into tuiles while warm.
Grapefruit Confit
Kumquat Gel
Blend Kumquats
Blend kumquats with sugar and water until smooth.
Prepare Gelatin
Soak gelatin in cold water, dissolve in warm kumquat mixture.
Chill
Pour into a mold and refrigerate until set.
