Cook the Noodles

Bring a large pot of water to a boil. Add the buckwheat soba noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

Prepare the Vegetables

While the noodles are cooking, prepare the sugar snap peas by trimming the ends. If needed, cut them in half. Chop the pickled carrots, nira chive, and cilantro. Set aside.

Make the Vinaigrette

In a small bowl, whisk together the Thai-chile peanut vinaigrette ingredients until well combined. Adjust seasoning to taste.

In a large bowl, combine the cooked soba noodles, sugar snap peas, pickled carrots, nira chive, pea shoots, and pickled red cabbage. Drizzle with the vinaigrette and toss gently to combine.
