Salmon

Corn and Mushroom Sauté

Potato Purée

Method

Preparing the Salmon

1

Seasoning the Salmon

Preheat the oven to 400°F (200°C). Rub the salmon fillets with olive oil, and season with salt and black pepper.

2

Baking the Salmon

Place the seasoned salmon fillets on a baking sheet lined with parchment paper. Slice the lemon and place a slice on each fillet. Bake for 12-15 minutes or until the salmon is cooked through.

Cooking Corn and Mushrooms

3

Sauté the Mixture

In a skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute. Then add the sliced mushrooms and cook until soft. Stir in the fresh corn and cook for an additional 5-7 minutes. Season with salt and pepper to taste.

Making Potato Purée

4

Boiling the Potatoes

In a large pot, cover the diced potatoes with water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to the pot.

5

Puréeing the Potatoes

Add butter, heavy cream, salt, and pepper to the potatoes. Mash or use a hand mixer to blend until smooth and creamy.

Plating

6

Serve the Dish

On each plate, place a generous scoop of potato purée, top it with the sautéed corn and mushrooms, and finish with a piece of baked salmon.
