Method
Gelato Preparation
Combine Ingredients
In a medium saucepan, combine the whole milk, heavy cream, sugar, and vanilla extract. If making chocolate gelato, add cocoa powder.
Heat Mixture
Heat the mixture over medium heat until the sugar dissolves and the mixture is heated through but not boiling.
Chill Mixture
Remove from heat, cool to room temperature, then refrigerate for at least 4 hours or overnight.
Churn Gelato
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze
Transfer gelato to an airtight container and freeze for at least 2 hours before serving.
Sorbet Preparation
Prepare Raspberries
In a blender, puree the raspberries until smooth. Strain through a fine-mesh sieve to remove seeds.
Combine Ingredients
Mix the raspberry puree with the simple syrup and lemon juice.
Chill Mixture
Refrigerate the mixture for at least 30 minutes.
Churn Sorbet
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a fluffy texture.
Freeze
Transfer the sorbet to an airtight container and freeze for at least 2 hours before serving.
