Infuse Juniper Berries

In a small saucepan, combine the juniper berries with 120ml of sake over low heat. Allow the mixture to simmer gently for about 5 minutes to infuse the flavors. Be careful not to boil.

Add Sweetener

Remove the saucepan from heat and stir in 1 tablespoon of honey until fully dissolved. This will balance the earthy flavors of the juniper.

Citrus Addition

Let the mixture cool for a few minutes, then stir in 15ml of fresh lemon juice to add brightness to the drink.

Strain and Serve

Strain the mixture into a chilled glass to remove the juniper berries. Garnish with a twist of lemon peel on top for added aroma and visual appeal.
