Chill and clean oysters
Keep oysters chilled on ice until ready to shuck. Scrub shells under cold running water with a stiff brush to remove grit. Discard any oysters with cracked shells or an off smell.

Prepare a stable shucking station: towel, oyster knife, and a bowl for discarded shells. Have a tray with crushed ice ready to place shucked oysters.

Shuck oysters
Hold an oyster flat-side up at a slight angle, insert the oyster knife at the hinge, twist to pop, then run the blade under the top shell to sever the muscle. Tip the oyster so liquor stays in the bottom shell. Repeat for all oysters and transfer each to the chilled ice bed or rock salt to stabilize shells.

Check for shell fragments
Carefully inspect each oyster for shell pieces; remove any with a small spoon or tweezer. Keep oysters level so they retain their liquor.
Gari–Kimchi Vinaigrette & Radish

Make vinaigrette
In a small bowl whisk together rice vinegar, soy sauce, sesame oil, yuzu or lemon juice, gochugaru, and sugar or honey until sugar dissolves. Taste and adjust balance — it should be bright with a little heat and savory tang. Add cracked black pepper and a pinch of salt if needed.

Prepare gari and radish
If your gari slices are thick, thinly slice them. Toss the julienned Korean radish with 1 teaspoon of the vinaigrette to lightly pickle and season. Reserve remaining vinaigrette.

Combine kimchi
Finely chop the kimchi and mix with 1 teaspoon of the vinaigrette to loosen and marry flavors. This brightens the kimchi and makes it easier to spoon onto oysters.
Assembly

Plate oysters
Arrange the chilled oysters on the bed of crushed ice or rock salt so shells sit level and are stable.

Place a small mound (about 1/2 to 3/4 tsp) of the dressed kimchi onto the oyster meat, taking care not to overpower the oyster's liquor.

Top each oyster with a thin strip or small nest (about 1 tsp) of the gari and a few radish matchsticks for crunch and brightness.

Finish with a tiny drizzle (about 1/4 tsp) of the remaining vinaigrette over each oyster, a few sliced chives, an optional microgreen or shiso leaf, and a tiny sprinkle of gochugaru if desired.

Serve immediately with lemon or lime wedges on the side. Encourage diners to eat oysters in one bite to enjoy the balance of brine, pickled ginger, kimchi, and crisp radish.
Notes & Timing

If concerned about raw oysters, briefly flash-poach: remove oyster from shell into hot broth for 5–8 seconds and return to a warmed shell before assembling. This will change texture and is not traditional for raw presentation.

Leftovers: prepare toppings fresh; do not store shucked oysters longer than a few hours on ice. Consume oysters the day of purchase.
