Method

Prepare fish
Pat the fluke wing pieces dry with paper towels. Inspect each piece and trim any excess connective tissue so each piece lies flat and presents evenly.

Salt & rest
Lightly sprinkle fine sea salt evenly over both sides of each engawa piece. Arrange them on a tray and let rest in the refrigerator for 10–15 minutes. This firms the flesh and draws out excess moisture for better texture and flavor.

Rinse & acid
After resting, quickly rinse the salt off under cold water or gently wipe with a damp cloth to remove excess salt. Pat dry again. Brush each piece very lightly with rice vinegar (about 1/4 tsp per piece) to add a faint brightness and help slightly cure the surface.

Optional torching
If you want a slightly smoky, caramelized surface (common with engawa preparations), brush a thin film of neutral oil on the skin side. Using a small culinary torch, lightly brown the skin and edges until you get a faint char and the edges turn opaque—30–60 seconds per piece, moving the flame continuously to avoid overcooking. The flesh should remain mostly translucent and tender.

Make finishing sauce
Mix the soy sauce and the remaining rice vinegar in a small bowl. Taste and adjust so the sauce is balanced—salty with a touch of tang. Add a few drops of fresh lemon juice to brighten (use about 1/4 tsp).

Assemble & garnish
Arrange the engawa pieces on a chilled plate, skin side up if torched. Lightly brush or dot each piece with the soy-vinegar-lemon finishing sauce (about 1/2 tsp per piece). Place a small pinch of grated wasabi on top or to the side of each piece. Garnish with microgreens or thinly sliced scallion and sprinkle toasted sesame seeds if using.

Serve
Serve immediately so the texture is fresh and the torched surface (if used) is warm. Provide extra soy or citrus on the side for diners who want additional seasoning.
