Custard base

Make dashi (if not using store-bought)
If you don't have prepared dashi, make about 2 cups using kombu and bonito flakes: place a 6" piece of kombu in 2 cups cold water; heat until just before boiling, remove kombu, add 1/2 cup bonito flakes, steep 1 minute, strain. Chill until warm (about 110–120°F / 43–49°C) before mixing with eggs.

In a medium bowl, gently whisk the 4 large eggs just until the yolks and whites are combined. Do not incorporate too much air.

Warm 2 cups of dashi to about 110–120°F (warm to the touch). Add 1 tablespoon light soy sauce, 1 tablespoon mirin, and 1 teaspoon salt to the dashi and stir to dissolve.

Slowly pour the warm seasoned dashi into the beaten eggs while stirring gently in one direction to combine. Strain the egg-dashi mixture through a fine-mesh sieve into a clean bowl to remove chalazae, foam, and any chalaza strings. This yields a smooth custard.

Cover the bowl with plastic wrap and let it rest in the refrigerator for 15 minutes to let bubbles settle; gently skim any foam from the surface before portioning.
Crab & bacon garnish

Preheat oven to 375°F (190°C) if you prefer finishing the bacon in the oven, or plan to cook the bacon on the stovetop in a skillet.

In the warm brown butter, gently toss the 6 oz crab meat and 2 tablespoons sliced scallions just to warm through (20–30 seconds). Stir in 1 teaspoon grated ginger and a pinch of white pepper. Taste and add a small pinch of salt only if needed (crab and bacon are already salty).
Assembly & steaming

Prepare 4 (6–8 oz) heatproof ramekins or small cups. Place about 1 tablespoon of the chopped bacon into the bottom of each ramekin. Divide the warmed crab and brown-butter mixture evenly among the ramekins (about 1.5 oz crab per ramekin).

Gently ladle the strained egg-dashi mixture over the fillings into each ramekin, filling to about 1/4" (6 mm) below the rim. Wipe any drips from the rims and cover each ramekin tightly with aluminum foil or a lid to prevent condensation from dripping into the custard.

Set up a steamer: bring 1–2 inches of water to a simmer in a pot that will hold the ramekins with a steamer basket or trivet. Place the covered ramekins in the steamer basket. Steam over low simmer (water should be barely moving) for 12–15 minutes, until the custard is set but still jiggles slightly in the center. (If you have a thermometer, internal custard temperature should be about 70–75°C / 158–167°F.)

Dot each custard with a few drops of the reserved brown butter from the crab step (if any remains) and an extra flake of chopped crisp bacon for texture.

Garnish with a pinch of thinly sliced scallion greens and, if desired, a few drops of soy sauce at the edge (no more than 1 teaspoon per serving). Serve warm.
