Inspect and chill
Keep the bluefin tuna refrigerated until just before use. Pat the loin dry with paper towels. Trim any sinew or discolored edges with a sharp knife to reveal clean, bright red akami.

Slice
Using a very sharp, long-bladed knife, slice the tuna across the grain into 1/4-inch (6–7 mm) sashimi slices or into 1/2-inch (12 mm) slices if you prefer slightly thicker pieces. Arrange slices on a chilled plate in a single layer or slightly overlapping.
Marinade & Seasoning

In a small bowl, combine light soy sauce (2 tbs), mirin (1 tbs), rice vinegar (1 tsp), sesame oil (1/2 tsp), fresh lime juice (1/2 tsp), grated ginger (1/2 tsp), grated garlic (1/4 tsp), kosher salt (1/4 tsp), and freshly ground black pepper (1/8 tsp). Whisk briefly until blended. Taste quickly and adjust balance — it should be savory with a touch of sweetness and bright acidity.

Brush or spoon about half of the marinade lightly over the arranged tuna slices just before serving so the fish is flavored but not soggy. Reserve the remaining marinade to serve alongside as a dipping sauce (or drizzle).
Optional Sear (Textural Contrast)

If you want a contrast between raw interior and seared edge, heat 1 tsp neutral oil in a small skillet over high heat until shimmering. Quickly sear the edges of each slice: hold the slice with tongs or use a spatula and press each edge into the hot pan for 2–4 seconds per edge, just enough to develop a flash-sear without cooking through. Transfer seared slices back to the serving plate.
Plating & Garnish

Sprinkle toasted sesame seeds (1 tsp) evenly over the tuna slices. Scatter thinly sliced scallions (2 tbs) and microgreens or shiso leaves (1/4 cup) across the plate for color and freshness.

Place small dollops of wasabi (1/4 tsp total) on the plate or in a tiny dish. Add pickled ginger (1 tbsp) to cleanse the palate between bites. Arrange 4 thin lemon or lime wedges on the side.

Serve immediately with the reserved extra soy or ponzu (2 tsp) for dipping. Encourage diners to squeeze a little citrus if desired and to enjoy the clean, meaty texture of the akami.
