Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

Season the Rice

In a small saucepan, combine rice vinegar, sugar, and salt over low heat until the sugar dissolves. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Tuna

Slice the fresh tuna loin against the grain into thin slices (about 1/4 inch thick).

Form Nigiri

Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of tuna on top of the rice and press gently to adhere.

Serve

Arrange the nigiri on a plate. Serve with wasabi and soy sauce on the side. Optionally, cut the nori sheet into small strips and place on the side for garnish.
