    Prepare and preheat

    Preheat the oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan or round cake pan and line the bottom with parchment for easy release.

    Mash bananas

    In a large bowl, mash the ripe bananas with a fork until smooth with tiny lumps for texture.

    Combine wet ingredients

    Whisk melted butter, granulated sugar, eggs, vanilla extract, and chicory coffee powder into the mashed bananas until well combined and glossy.

    Mix dry ingredients

    In a separate bowl, whisk together all-purpose flour, buckwheat flour, baking powder, salt, and cinnamon (if using).

    Combine dry and wet

    Pour half of the dry ingredients into the banana mixture, add half of the warm milk, and gently fold. Repeat with the remaining dry ingredients and milk, mixing until just combined. Do not overmix; a few small lumps are fine.

    Bake

    Pour batter into prepared pan and smooth the top. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. If the top browns too quickly, tent with foil after 25 minutes.

    Cool and serve

    Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely. Slice and serve warm with a scoop of white coffee ice cream for contrast.
