Happy Hour Omakase - Nine-Course Tasting

    Course 1: Shoyu Salmon Masago Nigiri

    Cook short-grain rice with rice vinegar, sugar, and salt; let cool. Shape into 8 small ovals, top with a thin slice of salmon, and brush with a light shoyu glaze (ashiake soy glaze mixed with a drop of soy). Garnish with sesame seeds and scallion if desired.

    Course 2: Citrus Seared Tuna Nigiri

    Season tuna with a pinch of salt, sear lightly if desired, and top small rice ovals. Drizzle with lemon juice and a touch of olive oil; finish with cilantro leaves.

    Course 3: Mango-Kani Roll Bites

    Dice mango and avocado; mix kani with a little mayo (optional) and a squeeze of lemon. Place mixture on mini nori squares over seasoned rice, roll gently, slice into bite-sized pieces.

    Thinly slice cucumber; lay over compact rice nibs with a dab of wasabi between. Lightly brush with soy and sesame oil.
